Philip's son and the third generation. Ian runs the business day to day, from buying to the cutting room.

Having handed over the shop, Philip now focuses on the farming, rearing native breeds on Bodmin Moor.
Sister & brother in law
They manage the farming side from two holdings, one on the moor and one by the river Tamar.
A five year apprenticeship. It is the only way we know to pass on a craft that lives in the hand and the eye.

Decades on the block, and the person the apprentices watch. Breaks a carcass down the way it has always been done here.
The next generation
Halfway through a five year apprenticeship, one of the longest formal butchery trainings left in the trade.
The counter
The faces you meet. They know the cuts, the farms, and what to do with a piece of shin on a wet Tuesday.
Nearly a hundred people, mostly local
Beyond the family and the master butchers, the team runs to nearly a hundred. Counter staff, cutters, drivers, the office, the farm.
Almost all of them live within a few miles of the shop. When you buy from us you are keeping a Cornish trade, and a Cornish town, in work.
